I have recently fallen in love with freezer meals. Each week I try to put a couple away and on those busy days when I don't have the time to make dinner (or on the lazy ones when I just don't want to) all I have to do is pull a yummy meal out of the freezer!! So I thought that I would share the happiness and post some of my favorites.
Beef Stroganoff
2 pounds beef stew meat
3/4 cup sliced fresh mushrooms
1 (1.25 oz) envelope onion soup mix
1 (10.75 oz) can cream of mushroom soup
3 T red wine vinegar
1/4 cup quick cooking tapioca
1 cup sour cream
Cut beef stew meat into 1-inch cubes. Place stew meat and mushrooms in slow cooker. Combine soup mix, soup and vinegar. Stir in tapioca. Cover and cook on Low for 8 to 12 hours or on High for 4 to 6 hours. Stir in sour cream. Remove from slow cooker and allow to cool. Place in labeled freezer bag. 8 servings.
To serve: Thaw. Heat and stir until smooth and hot throughout. Serve over hot, buttered noodles.

Never say never....I remember when you said you'd never scrapbook and now you scrapbook and blog! Now I can see what's going on with you and your family since I never see you anymore. Beware...blogging is very addicting!
